Place tomatoes in a colander. Place colander inside a large bowl.
Press the juice from the tomatoes into the bowl. The seeds and
juice will squeeze through the colander, discard the juice.
Remove the stems from the basil. Roll the basil and Julianne in one direction, then turn and cut again cross grain being careful not to over chop. Add the basil and green onions to the tomatoes and mix while still in the colander.
Transfer mixture to a bowl. Mix in salt, oregano, pepper, olive oil, Good Spirit Foods Sundried Tomato Basil Vinegar, and garlic powder. Chill for at least 1 hour.
Drain the juice, which can be reserved and used for a dressing
for a salad. Serve bruschetta mix over bread, crackers, fish,
salad, or
meat
